Strawberry Basil Fresca
My go-to when it is hot out. Strawberries and basil simmered into a quick syrup, then stretched with fresh lemon and cold water. Refreshing, a little fancy, and it never lasts long on the table.
Instructions
In a medium saucepan, combine 1 cup of the water with your sweetener. Heat over medium until it dissolves, then add the strawberries and basil and simmer for 5 minutes.
Take it off the heat and let it cool all the way to room temperature. Strain through a fine mesh strainer into a large pitcher.
Stir in the lemon juice and the remaining 4 cups of cold water.
Fill glasses with ice and pour the fresca over. Garnish with a strawberry slice and a whole basil leaf.
Let the syrup cool completely before you add the lemon juice. Stirring fresh lemon into warm syrup cooks off some of that bright, zingy punch, and the cold-in-cold is exactly what makes it taste so alive.
